Watermelon Salsa for this summer!

Ninety-two percent water (hence the name), watermelon is a good source of vitamin C and, when it’s red (some are orange or yellow), also has lycopene, an antioxidant that may help protect against heart disease and some types of cancer. Enjoy fresh wedges (go ahead and see how far you can spit the seeds) or, better yet, get creative with watermelon recipes. Few foods are as refreshing as watermelon. These healthy watermelon recipes are delicious ways to enjoy this fresh summer fruit. Watermelon Salsa is a creative way to showcase watermelon. Sweet & Tangy Watermelon Salad is a tasty accompaniment to grilled pork tenderloin or chicken. Or enjoy a pitcher of Watermelon Agua Fresca at your next warm-weather get together.

Watermelon  Salsa


  • cups finely diced seedless watermelon,
  • 2 jalapeno peppers, seeded and minced
  • 1/3 cup chopped cilantro, (about 1/2 bunch)
  • 1/4 cup lime juice
  • 1/4 cup minced red onion, (about 1/2 small)
  • 1/4 teaspoon salt, or to taste


Place watermelon, jalapenos, cilantro, lime juice and onion in a medium bowl; stir well to combine. Season with salt. Serve at room temperature or chilled.


Watermelon Slush


    3 cups diced watermelon         2 tablespoons lime juice

    1 tablespoon sugar                    1 cup crushed ice

    1/2 cup water


Blend watermelon, lime juice, sugar, ice and water in a blender until smooth.
